A simple, but incredible Italian salad of fresh mozzarella, cherry tomatoes, sweet basil, and drizzled with balsamic glaze and olive oil.
This is a super-easy Italian salad, bursting with flavor and freshness and ready to eat in minutes. Have it as a side-dish to grilled chicken, or just enjoy this salad on its own. You can also put it on top of crusty Italian bread as an appetizer.
Carrabba's uses Burrata mozzarella for their caprese salad, but depending on where you live, it can be difficult to find and expensive. Regular fresh mozzerella is fine; just don't use the blocks that you would grate onto pizza.

2 pt cherry tomatoes, halved.
¼ cup red onions, thinly sliced.
¼ cup fresh basil leaves, torn. Don't use dried basil.
1 tbsp balsamic glaze Balsamic glaze is just regular balsamic vinegar, cooked down until it reaches a syrup-like consistency.
8 oz mozzarella (ball, sliced or even pearls). Burrata mozzarella is best, but any good, fresh mozzarella will do.
1 ½ tbsp olive oil. Preferably extra virgin.
Freshly-ground sea salt and black pepper (to taste).
1 Gently combine tomato halves with red onions and basil leaves, and arrange on a plate. Drizzle with balsamic glaze.
2 Place mozzarella in center of plate. Drizzle olive oil over both the cheese and tomatoes. Garnish with freshly ground sea salt and black pepper.
